Healthy Cooking: Cucumber Salad

11/2 cups English Cucumber, 1/2 red onion, 1/2 red pepper, 1/2 yellow pepper, 1/2 c. celery, 2 cups green olives with pimentos, 1/2 c. feta cheese, salt and pepper to taste, 1/4 c. Balsamic Vinegar. Quarter and slice cucumbers, chop red onion, seed and chop peppers, chop celery and place in to large bowl. Add sliced olives and feta cheese. Add salt/pepper and balsamic vinegar and toss gently. Let sit in frig for a couple of hours. Enjoy!

    This reminds me of a salad I make at work like every night. It’s s Greek salad.
    And it has
    Cucumber, tomato, red onion and green pepper. In a Greek feta and oregano dressing topped with feta cheese and whole black olives. It’s really yummy lol

    Most of the fat in Olives is healthy, and the number of calories is forgettable, I prefer rapeseed oil rather than that cheese thing, oh I also tried avocado in it, great stuff.

    It reminds me of my sister’s version of a greek salad which consists of cucumber, roma tomatoes, purple onion, olives, red bell peppers, and feta cheese. Which is topped off with some Kraft, sun-dried tomato vinaigrette. This salad also looks great!

    Want a dressing ? Try with a natural (not sweeted) yogurt, salt, pepper, some lemon juice (acidity is important for my french taste and lemon give freshness that suits well with cucumber) and don’t forget the magic ingredient : aneth !
    A kind of greek tzatziki taste in your salad !

    I use cucumber, a little bit of jalapeno, cilantro, one whole mango and italian dressing! Its quite amazing. You should try it. :]

    I’ve been cooking it almost every week, and have been having it for my lunch at least twice a week!
